Local markets have been amazing lately, with stalls topped high with a number of pumpkin varieties in all shapes and sizes. It just seems to me, a shame to leave them behind, so it has been my mission to adopt one of each kind. Yesterday, I made pumpkin hummus, which is now one of my favorite things in the world. Hope you like it too
Ingredients
1 cup pumpkin cubes
2 cloves garlic
1/2 lemon, juiced
3 tbsp olive oil
1/4 tspn cumin seeds
2 tbsp water
salt
In an oven tray, coat pumpkin cubes and garlic with olive oil , salt and cumin seeds. Roast until golden. Blend pumpkin, garlic, water and lemon juice into a paste, whilst gradually adding olive oil and salt to taste. Serve in a bowl, drizzled with olive oil and cumin seeds.
